SPICY BROCCOLI RABE
This is a go to in my family for Thanksgiving and Christmas celebrations. A slightly bitter green, this is a great digestive to add to a plate full of animal fats and carbs! The spice and acid from garlic, crushed red pepper and lemon really enhance this dish. Pro tip- start your meal with a few bites of this or another bitter green to jumpstart digestion.
Broccoli rabe is great for digestive health, but is also considered one of the best greens for kidney and liver health, promoting proper detoxification.
Ingredients
2 bunches of organic broccoli rabe
3-4 cloves of organic garlic
pinch of crushed red pepper
pinch of salt
juice of half a lemon
extra virgin olive oil
Instructions
Start by cleaning and chopping your broccoli rabe. You want large chunks, so simply cutting it in half will do.
Mince your garlic and sauté in a few tablespoons of extravirgin olive oil.
Add your broccoli and sauté. Keep your lid on the broccoli and the heat on low to medium to promote steam.
Finish with red pepper, salt and lemon.
Plate and drizzle with more extra virgin olive oil and salt.
