GREEN BEANS WITH ANCHOVIES

My gourmet take on classic sauteed green beans. These beans are bright and punchy from the lemon zest and juice, and they have a deep, rich umami flavor from the inclusion of anchovies. Plus, we’re sneaking in some protein and good omega 3 fats with the anchovies.

In TCM green beans are considered a cooling and detoxifying food. They also promote kidney health, which is essential for thriving in the winter months. The kidneys are the organ most closely associated with winter and we’ll be transitioning to focusing on kidney health in the coming months.


Ingredients

  • 1 lb of organic green beans

  • 1/2 tin of anchovies

  • 3 cloves of organic garlic

  • extra virgin olive oil (measure with your heart)

  • A few pinches of crushed red pepper flakes

  • lemon zest

  • lemon juice from 1 lemon

  • flaky sea salt


Instructions

  • Clean, trim, and cut your green beans in half. Set aside.

  • Mince garlic and saute on low heat in extra virgin olive oil to release the garlic flavor.

  • Add your anchovies and cook down, smashing them with a back of a wooden spoon until they dissolve fully into the oil. Add your crushed red pepper flakes and let everything simmer for 1 to 2 minutes.

  • Add your green beans and stir frequently, cooking about 20 minutes or until they are soft, but some may still have a slight crunch.

  • Finish with the juice and zest of one lemon and some flaky sea salt.
