Roasted DELICATA SQUASH
I’m back with another beautiful side dish for fall, my roasted delicata squash. This is a super easy side dish that you can prep in less than 5 minutes. This will bring fall flavors and colors to your dinner table and provide the healing benefits of squash to your plate. Delicata squash is known for its healing digestive properties, energetics and reducing inflammation in traditional Chinese medicine.
Combining this with coconut oil provides a natural sweetness and helps to crisp the skin. A sprinkle of salt to enhance the flavors, and you’re ready to enjoy this incredible fall dish made with only whole, single ingredient foods.
Ingredients
2 delicata squash
2 tbsp of organic cold pressed coconut oil
Heavy pinch of celtic sea salt
Instructions
Preheat your oven to 375 degrees Fahrenheit.
Clean the outside of your squash as we will eat the skins!
Chop off the 2 ends, and then cut into slices. Cut those slices in half, then using a pairing knife or spoon, scoop out the guts and seeds.
Toss in your coconut oil and sprinkle with salt. If your coconut oil is solidified, melt in the microwave for a few seconds before so that its liquid.
Roast your squash in the oven for 45-50 minutes or until the squash is soft and starting to caramelize, with a crispy skin.
Serve up and add another pinch of salt if needed.
