PUMPKIN SPICE PROTEIN BALLS
Hitting you with some more pumpkin spice goodness this week. These easy, one bowl pumpkin spice protein balls follow my formula for making the perfect protein ball snack. They are soft, chewy and sticky with about 5 grams of protein in each. I recommend storing these in the fridge or freezer to keep them firm. These are great for those of you that are always on the go, long car rides, and kiddos!
In TCM pumpkin is great for spleen and digestive health, which let’s be honest, we are all always working on. The cinnamon is great for nourishing yang, warming the body and blood and improving digestion, and the nutmeg helps to disperse cold, strengthens the circulation of blood and qi and supports all of the digestive organs.
Ingredients
1/2 cup of freshly ground flaxseed
1/2 cup of almond flour
1/4 cup of organic almond or cashew butter
1/2 cup of organic pumpkin puree
2 tbsp of maple syrup
1/2 cup of protein powder of your choice, but I do recommend something vanilla flavored (Truvani Vanilla Chai is amazing here)
1 tsp vanilla extract
1 tsp pumpkin pie spice
pinch of salt
Instructions
Start by combining all your wet ingredients, including the nut butter, together in a bowl. I would use a whisk here.
Add in your protein powder and mix well.
Then add in your ground flaxseed and mix, almond flour and mix, spices and mix.
If your mixture is still too wet, continue adding almond flour until you get a consistency you can work with. You can also let this chill in the fridge for 20 minutes to stiffen up a bit.
Roll out your protein balls and place them on a parchment lined baking tray.
Pop them in the freezer for one hour to set.
Store in a plastic container or bag and keep them in the fridge.
